120 Minute Lemon Broccoli Pasta Skillet
This super easy vegetarian pasta is a quick meal for a busy night! The broccoli and spinach keep it healthy, and the garlic, lemon, and red pepper make it extra tasty. A great last minute dinner for weeknights.
2Pesto Pasta Salad
Pasta salads don’t have the best reputation, but you can definitely make a healthy pasta salad. For this pesto pasta salad, I kept it simple. I used a whole grain pasta, and instead of a bottled salad dressing like you often see, I used my Spinach Basil Pesto. It’s full of flavor and the spinach component adds a powerful vegetable to the dish.

6Creamy Avocado Pasta
I wish I had tried this creamy avocado pasta sooner! Creamy delicious goodness without the calories of any actual cream! Well, I guess avocados aren’t really low in fat, but they’re a super food loaded with nutrients and other health benefits. You’ve gotta love avocados! This pasta sauce is rich and creamy and the ingredients are super healthy. There’s even a little bit of spinach thrown in for good measure!
7Mexican Street Corn Pasta Salad
A delicious Mexican Street Corn Pasta salad with tons of veggies and a simple creamy chili-lime dressing.
8Skinny Cajun Shrimp Alfredo Pasta
Skinny cajun shrimp alfredo pasta. This one will be made often around here I think. So tasty, so easy, and so fast. Plus, it was super easy to make some plain shrimp and pasta (so boring right?) for the kids that don’t really like sauce or spice. Usually, I just make them eat whatever we’re having because I’m really not one for making multiple meals every night.
But, every once in a while, when it’s easy to modify stuff so I know they’ll like it, I do. Leaving some of the pasta and shrimp plains is no extra effort and everyone is happy.
